Nose:

Curious blend of peak summer ripe melon and barley hay. There’s a fresh doughiness and assorted berries, all neatly wrapped in light mint and red chili seeds. The sweetness of honey is followed by a robust vanilla backdrop, showcasing significant Bourbon influence. Subtle touches of aloe vera and malt linger in the background.

Palate:

Melon chunks dripping with condensed milk and creamy vanilla sauce. A swift fleeting tone taking the form of Basil and Marjoram, while barley and mineral notes giving an arid brush at the other side of the crest. Bitterness sits deeper as white oak begins to weigh in at the same time. Summer fruits, vanilla pods and extract emerge in attempt to balance the dry patches. Peppercorn and barley sugar add a final touch of spice and sweetness.

Finish:

The finish is dominated by white oak, with a subtle saltiness and lingering traces of vanilla and yellow fruits. A delicate white floral fragrance gently diffuses at the very end.

Thoughts:

This is my first Daftmill review, and I’ve long regarded this distillery as one of the best among the new wave of Scottish producers. This expression leans towards a sweeter, bolder style, with a strong Bourbon influence that complements but doesn’t overpower the distillery’s signature traits. The herbal and mineral elements present a challenge to the overall balance, but they add a unique complexity. Overall, this is a rewarding experience, particularly for those who enjoy a Bourbon-centric profile.
